In case you need some savory dinner inspiration, we’re sharing our Tofu Stew recipe with y’all! This is the perfect meal to prepare for your family or even for your next gathering. Seriously, you have to give this a try. 😊 May you all have an incredibly satisfying dinner tonight! 😋💕

TASTY TOFU STEW ✨

1 pc (300 g) sweet potato, cubed
3/4 cup pickles, diced
1/2 cup diced tomatoes
1 pc onion, chopped
1 tbsp smoked paprika
5 cloves garlic, chopped
1/4 cup tomato ketchup
2 tbsp soy sauce
3/4 cup green peas
1 cup pineapple juice
450 g extra firm tofu
2 tsp ground black pepper
salt to taste

Method

For the Tofu:
Using a clean towel, pat dry your firm tofu to remove the excess water. Cut tofu in long strips or into 8 equal pieces.

For the Marinade:
Combine pineapple juice, soy sauce, smoked paprika and ground black pepper in a bowl and mix them well. Add the tofu and let it marinate for at least 2 hours.

While waiting fry the sweet potato. Add a splash of vegetable stock or water to prevent it from sticking to the pan. Cook until color turns light brown. Transfer in a bowl and set it aside.

Fry the tofu in the same skillet. Add a splash of the marinade and cook it for 2-3 minutes. Remove from pan and set aside.

Saute the garlic, onion, pickles, tomatoes and green peas. Add the cooked tofu in the pan and pour the reserved marinade. Add the ketchup, salt to taste, sweet potato and mix them well. Cover with lid and continue to cook until sauce is reduced. Serve and enjoy with steamed rice! 😊
