Smoked Pork Belly

Ingredients:
* 4lb Pork Belly slab (uncured)
* 2 tablespoons of Salt
* 2 tablespoons of Pepper
* 1 tablespoon of Garlic Powder
* 1 tablespoon of Onion Powder
* 2 tablespoons of Smoked Paprika
* 1/2 tablespoon of Cayenne Pepper
* 1/3 cup of Sugar (Preferably Brown, but Cane ok too)
* 1/2 – 1 cup of mustard
* Apple juice
* Apple Wood Chips (can use other flavor)

Directions:
1. Soak Apple Wood Chips in water for ~30mins before putting in smoker
2. Preheat Smoker to 225 degrees F
3. Using a sharp knife, cut the pork belly in 1 inch squares. Don’t cut too deep, just barely into the muscle.
4. Spread mustard liberally onto Pork Belly then season with salt, pepper, garlic powder, onion powder, smoked paprika, cayenne pepper, and sugar
5. Place the seasoned Pork Belly in the smoker and smoke until the internal temperature reaches 165 degrees F (about 6 hours). Spritz with the apple juice every hour while it is cooking.
6. Once the Pork Belly reaches 165, remove from the smoker and wrap in heavy duty foil with 1/2 cup of the apple juice. Seal the edges of the foil completely and return to the smoker until the internal temperature reaches 200 degrees F.
7. Remove Pork Belly from foil and place back in the smoker for 10 more minutes
8. Remove Pork Belly from smoker and allow to rest for 10 – 15 minutes
9. Enjoy!
