Today I’m showing you how I make smothered oxtails, it’s not my recipe it’s a combination of many recipes that I have watched over the years on YouTube! Smothered Oxtail Recipe: serves 10-12 ppl
12lbs of Oxtails
1 1/2 red bell pepper sliced
1 1/2 green bell pepper sliced
1 1/2 Large onion sliced
1/4 cup diced garlic
1 tablespoon seasoning salt
1 tablespoon garlic powder
1 tablespoon Paprika
Salt and Pepper to taste
All purpose flour for browning
About 1/2 cup to 1 cup of vegetable oil
Corn, Okra, and Tomatoes: 10-12 ppl
4 bags frozen corn
4 bags frozen okra ( preferably the whole one and you cut the end pieces off and slice into small bite size pieces)
2 14 oz cans stewed tomatoes diced ( flavored or unflavored it’s up to you)
1 small onion diced
4 -6 cloves of garlic diced
Corn meal to toss okra
Seasoning salt to taste
Salt and pepper to taste
Vegetable oil or Olive oil
Rice
4 cups rice (rinsed and drained)
1 small onion diced
1 tablespoon butter
Fresh or dried herbs (optional)
Chicken base powder to taste
Salt to taste
4 cups of water
Olive oil
