Multiple blue zone recipes that are used internationally! Blue zones are areas in the world who are known to live longer than average. A blue zone diet consists of avoiding processed food, and limit consumption of meat, dairy, sugary foods and drinks.
Blue Zone Recipes
OKINAWA SWEET POTATOES
– 1 Pound Okinawa (purple) sweet potatoes
– 2 limes
– 1/4 cup olive oil
IKARIAN LONGEVITY STEW WITH BLACK EYED PEAS
– 1/4 cup extra virgin olive oil
-1 large red or white onion finely chopped
-4 garlic cloves finely chopped
– 1 fennel bulb
– 1 cup black eyed peas. If using dried peas, bring water to boil and cook for 1 minute. Remove from heat and let it sit for an hour. Drain, rinse and use
– 1 large tomato
– 2 tsp. tomato paste, diluted in 1/4 cup water
– 2 bay leaves
– dill to taste
– 3 large carrots chopped
– salt to taste
EGGPLANT LASAGNA
-32 oz jar of marinara sauce
– 1 cup ricotta, part skim
– 1 large egg
– 3 eggplants cut into 1/2 thick slices and poached
– 15 oz package frozen chopped spinach, defrosted and drained
– 1/2 cup of Parmesan cheese
HEIRLOOM BEAN SALAD
– 7 oz of any beans you like. This video contains kidney, black and pinto beans
– 1 cup lentils
– 1 cup red quinoa
– 1 cup kale
– 2 cups of broccoli slaw
– 1 tbsp thyme
– 3 tbsp sea salt
GARNISH
– chopped cilantro, parsley, or fresh scallion to taste
SMOKY VINAIGRETTE DRESSING
In food processor, add the following:
-1/4 cup olive oil
– 1/4 cup sun dried tomato (if necessary add more) (if using sun dried tomato from bottle, do not add olive oil)
– 1/3 cup balsamic vinegar
– 2 tbsp smoked paprika
– 2 tbsp honey
– 1 tbsp ground basil
– 1 tbsp ground black pepper
– If dressing is too thick, add water.
COSTA RICAN GALLO PINTO
– 2 cups cooked rice (cook 2/3 cup of dry brown or white rice first)
– 2 tbsp olive oil
-1 cup cooked black beans
– 1/2 cup of Worcestershire sauce
– 1/3 red pepper
– 1/3 onion or 1 small onion
