Maqluba is a dish that is traditionally cooked in countries such as Syria, Iraq, Lebanon, Palestine and Jordan. It consists of meat, rice, and fried vegetables placed in a pot which is flipped upside down when served, hence the name maqluba, which translates literally as “upside-down.”
This is definitely NOT a authentic recipe, I’ve added my own touches to make it more suitable for my own palette.
Yes, there’s quite a few steps to this but I promise you, its worth the effort as it tastes amazing Alhamdulilah 🙏
Ingredients:
500g Basmati rice
100g Vermicelli noodles-optional
200g red split lentils
3 potatoes-350g
12-15 florets of brocoli-200g and same amount of cauliflower
1tbs paprika
1tsp cayenne
1tsp garlic powder
1tsp salt
1/4tsp black pepper
1 large tomato
1 large onion
2 handfuls of fresh spinach
Cooking the chicken:
4tbs oil
4 cloves of garlic and same amount of ginger, paste
2 onions
4 bay leaves
2 cinnamon sticks
1kg Chicken
2tbs mixed curry powder
1tbs EACH of cumin powder, coriander powder & kashmiri chilli powder
1tsp turmeric powder
1 chicken stock cube
2 litres of hot water
1tbs ghee/oil to grease the pot
2 handfuls of fresh coriander
