I love how pico de gallo is so flavorful and refreshing! Traditionally a white onion is used, but I used a red onion for a milder and sweeter flavor. Feel free to adjust the lime juice, salt, and cilantro to your liking. This is best served with chips or on top of your favorite meat and rice combo! Honestly I think this homemade recipe is even better than Chipotle’s. Enjoy!

Ingredients:
-3 roma tomatoes, small diced
-1 red or white onion, small diced
-1 jalapeño or serrano pepper, small diced
-juice of 1-2 limes
-1/2 tsp sea salt
-1/3 cup finely chopped cilantro

Instructions:
-add the tomato, onion, and pepper into a bowl
-add lime juice, salt, and cilantro to your liking; be sure to give it a taste before adding more of each to balance the flavors
-allow to marinate for at least 30 minutes
-enjoy!
