Begun Basanti is a popular Bengali recipe with eggplants/Aubergines.. It has a rich creamy gravy texture made with Yogurt, poppyseeds, mustard seeds paste and then for the Basanti (vibrant yellow) color turmeric powder is added along with salt, sugar and paprika/Kashmiri red chili powder! No dominating spices are to be added in this specific recipe!
