Beginners luck? My first time smoking a 4kg Pork Butt on the Weber Kettle!

Today was my first time doing a long cook… I woke up at 4:30am feeling pretty confident that I could nail this but I was met with a few challenges HAHA.

So i needed to finish the cook and have the pork butt pulled before 6:00pm so i could have it delivered to my friends in time… because of that urgency i didnt let the pork hit the smoke long enough so the flavour wasnt consistent across the whole meat.

The rub for me personally wasn’t the best – i think i should have hit the pork with a stronger rub and let it sit and be absorbed longer because it was so thick.

Some of the positives – pulled easily, juicy, tender!

Overall I learnt a few things from this cook! Like they say, if you aint learning you aint doing it right LOL.

My one: cayenne pepper, chilli powder, garlic powder, smoked paprika, pepper
