BBQ Cauliflower
Ingredients:
– 1 large cauliflower
– 50g plain flour
– 100g yoghurt
– 1/2tsp pepper
– 1/2tsp smoked paprika
– 1/2tsp ground mace
– 1/2tsp cumin
– 1/2tsp cajun
– 1tsp onion powder
– 1tsp garlic powder
– 1 1/2tsp salt
– 80ml water
– 40ml oil
– 100g breadcrumbs
– 50g panko
– 70g BBQ sauce
– 70g melted butter
For the dip:
– 2 cloves garlic (minced)
– 30g parsley
– half lemon (zest and juice)
– 200g yoghurt
– salt, pepper to taste
For the dip, mix everything together.
Method:
1. Break the cauliflower into florets, or cut them into small pieces.
2. In a bowl mix the flour, yoghurt, salt, pepper and the other spices, water and the oil.
3. Pour the panko into another bowl and mix with the breadcrumbs.
4. Toss the florets into the batter, then transfer into the breadcrumbs and coat them well.
5. Place them on a non-stick baking tray (or use parchment paper) and put into the oven to 180℃ around 25-30 min.
6. Mix the BBQ sauce with the melted butter.
7. Remove the tray from the oven, pour over the BBQ sauce and coat them, then place them back to the oven for another 20-25 min or until crispy and golden brown.
