Juicy baked chicken legs and quarters are easy to make, and they are most delicious when baked in the oven. This chicken is baked until crispy on the outside and juicy on the inside.
This chicken recipe is been in my family for a very long time. I used to bake huge trays for my Sunday school students.
You can make a whole chicken or legs and quarters. You can add any veggies you like to bake along with the chicken. I love adding potatoes to my chicken. This chicken is unbelievable when it’s marinated the night before and baked the next day.
Ingredients for the marinate :
– 1 tsp old bay seasoning
– 1 tsp cajun seasoning
– 2 tbsp smoked paprika
– 1/2 tbsp salt
– 1/2 tsp lemon salt ( citric acid or lemon juice
– 1 tsp black pepper
– 1 tbsp olive oil
– 1/2 cup yogurt
Add all ingredients to a bowl and mix well until you have a marinate.
– Add about 1.5 lb of chicken legs and quarters to the marinate. Use your hand to make sure they are all marinated.
– Transfer chicken to a baking tray and cover tightly with foil.
– Bake at 450 F covered for 45 minutes and bake uncovered for 15 minutes.
