How to make fire roasted vegetable quesadilla & fire roasted salsa are healthy, delicious and easy recipes.

Vegetable Mix
1″ dice Zucchini
1″ dice Yellow squash
1″ Pepper, Red Pepper
1/2″ thick dice
1/2 tsp chile powder
1/4 tsp cumin
Salt and pepper

Procedure:
Place the cut vegetables in a bowl and toss in olive oil, chili powder, cumin and slt and pepper. Roast in a pre-heated oven to 450 5-7 minutes or until the vegetables have slightly caramelized. Cool vegetables down.

Seasoned Oil
1oz olive oil
1 pinch cumin
1 pinch smoked paprika
1 pinch salt and pepper
The vegetables should be roasted quickly and in a very hot oven to prevent the vegetables from becoming mushy. Seasoning the oil for sauteing the outside of the tortilla should be done sparingly as it is only designed to be a highlight the flavors not dominate the flavors.

Cheese mix
1/2 to 3/4 cup sharp cheddar
1/2 tsp dry cilantro

Fire Roasted Salsa
2 cups fresh tomatoes
1/2 cup diced red onion
3 cloves garlic
2 jalapenos pealed
1 chipotla pepper
1 tsp lime juice
Salt and pepper

Procedure:
Roast vegetables, clean roasted peppers, add seasoning and blend.
