Vegan Egg Salad Sandwich
Ingredients:
1 package extra firm tofu, cubed
1 to 2 tablespoons finely chopped onion
2 to 3 tablespoons finely chopped celery
1 teaspoon finely chopped fresh dill (or to taste)
2 teaspoons finely chopped fresh parsley (or to taste)
⅓ cup mayo
1 tablespoon yellow mustard
½ teaspoon turmeric
1 teaspoon onion powder
2 tablespoons nutritional yeast
1 teaspoon lemon juice
Pinch black pepper and sea salt
Black salt, to taste (optional)
Directions:
In a bowl, mash all ingredients until well mixed. Sprinkle sweet paprika on top!
For best results, chill for at least 1 hour in the fridge before enjoying.
