The recipe in the video is enough for 8 people so I’ve just halved the quantities in the recipe below so it serves 4.
1 Large onion
1/2 head of garlic
1/2 tsp ground cumin
1 tsp chipotle powder
1/2 tsp ground coriander
1 tblsp smoked paprika
1/2 tsp cayenne powder
Chillies to taste
500g diced sweet potato
400g canned kidney beans
400g canned black beans
50g tomato paste
1 can chopped tomatoes
1/2 tblsp sugar
1 cup quinoa
4 cups veg stock
1/2 tblsp fish sauce (optiional)(not if you want to keep it veggie/vegan
To serve:
1-2 avocado
200g creme fraichee or sour cream or cashew cream if you want it vegan
bunch coriander
2 limes
50g toasted pumpkin seeds
Pickled sliced Jalapenos (optional)
