Carnitas Jackfruit – Drain can of jackfruit and slice as shown. Sauté jackfruit with 1/2 an onion (roughly chopped) in 1 TBSP of avocado oil. Sauté until the onion is translucent then add 1 tsp smoked paprika, 1 tsp garlic powder, 1 tsp chipotle chili powder, 2 tsp cumin, salt, and pepper. Add 1/2 cup of water and the juice of one lime. Let simmer for 20-30 min until liquid is absorbed and jackfruit is tender.
Baked Tofu – Press and dry off a block of regular to firm tofu, cut into cubes, toss in 2 Tbsp of cornstarch. Bake at 400 for 20-30 minutes, depending on cube size, until crispy.

Cashew crema – Soak 1 cup of raw cashews overnight or for 10-20 minutes in boiling water. Blend cashews in a food processor with 1/2 cup of water, the juice of a lime, a pinch of lime zest, 1 tsp of ACV, and 1-2 tsp of chipotle peppers in adobo sauce, until as smooth as possible.
