Hi everyone!
I’m feeling the Fall vibes these days and the weather is definitely changing quickly. Since I’m craving warm cozy meals these days I decided to show you guys what a typical Fall Food day looks for me.
I eat a High Carb and Low Fat Diet and I feel fantastic eating this way! I follow the Starch Solution Diet that was created by the amazing Dr. McDougall. If you haven’t already read his book I suggest you try and get your hands on it. I weight less now and eat more food then I ever have. I don’t count calories or restrict my food portions. This way of eating has changed my life!
VEGGIE STEW
– 4-5 small zucchini, chopped
– 2 medium carrots, chopped
– 2 cooked chopped potatoes.
– 1/3 cup chopped onion
– 2-3 garlic cloves
1. Sauté onion, chili flakes and garlic. Throw in the chopped veggies next.
2. Add oregano, garlic powder,cumin, paprika and 1 tbsp of concentrated broth with 8 oz of water. Pressure cooked for 5 minutes.
3. Add in 1 cup of Oat milk or Coconut milk for extra creaminess.
I top my brown rice with my veggie stew. It’s so good! Super easy and super healthy!
CREAMY SWEET POTATO SAUCE
– 1 cup cooked sweet potato
– 2 cooked potatoes, chopped
– 2 Tbsp Nutritional Yeast
– 2 cloves of garlic
– 1 tbsp paprika
– Pinch of turmeric
– Salt & pepper
– 1 tsp concentrated veggie broth
– 1/2 cup warm water
Add potatoes, sweet potato, seasonings and warm water to a blender. Process until creamy. Store sauce in a large Mason Jar in the fridge for up to a week.
