Ultimate MEAL PREP with GRILLED CHICKEN! I started meal prepping again because working from home and watching the kids all day kinda put me in a rut. I needed some quick and healthy options that I could mix and match so here are some of my favorite combos lately. I made a Greek Chicken Souvlaki-inspired Bowl and a fresh Mango Curry Chicken Bowl to really spice things up!

I used the George Foreman Contact Smokeless Grill to prepare the veggies and chicken and was able to mix and match everything to create some interesting meals.

Souvlaki Marinade
1 lb chicken breast
2 tsp dried oregano
1 tsp paprika
4-5 cloves garlic, minced
1 tsp kosher salt
zest and juice from a whole lemon
2 tbsp olive oil

In a bowl, mix together the oregano, paprika, garlic, kosher salt, lemon juice and zest, and olive oil. Add chicken breast and marinate for at least 1 hour to overnight.

Mango Curry Marinade
1 lbs chicken breast
2 garlic cloves, minced
1 tsp curry powder
1/2 cup mango juice
1 tbsp fish sauce
1/2 a lime’s juice and zest
2 tbsp olive oil

In a bowl, mix together garlic, curry powder, mango juice, fish sauce, lime juice, and olive oil. Add chicken breast and marinade for at least 1 hour to overnight. Grill in George Foreman Contact Smokeless Grill at 375 for 6-8 minutes or until cooked through.

Other options to grill:
Brussels sprouts, eggplant, red bell peppers, olive oil, salt, and pepper and cooked until cooked through.

Meal Prep Options to mix and match:
Wild Rice
Arugula
Chopped Kale
Cucumbers
Tomatoes
Mangoes
Radish
Sauce: Hummus, Tzatziki, Balsamic Vinaigrette, Lemon dressing, your favorite dressing – anything goes.
