Macaroni Salad
3 Cups Dry Macaroni Noodles
2 Celery Stalks (finely chopped) about one cup
2 Carrots (grated) about one cup
1 Bell Pepper (finely chopped) about one cup
1/2 Red Onion (finely chopped) about a 1/2 cup
Dressing
1 Cup Mayonnaise
1/2 Cup Sour Cream
1/2 Cup Sweet Pickles (finely chopped)
2 Tablespoons Dijon Mustard
2 Tablespoons Honey
2 Tablespoons Sweet Pickle Juice /vinegar/or apple cider vinegar
1 Teaspoon Salt
1 Teaspoon Black Pepper
1/4 Teaspoon Garlic Powder
1/4 Teaspoon Paprika
Boil the noddles until cooked (I prefer the noodles to be al dente) Refer to the cooking instructions of your pasta. Drain and rinse with cold water. Place noodles in a large bowl and mix in a tablespoon of olive oil to prevent the noodles from sticking. Mix in the chopped vegetables.
In a medium sized bowl combine all of the dressing ingredients and whisk together well. Add the dressing to the bowl of pasta and vegetables. Mix together well. Refrigerate for a minimum of two hours and Enjoy!
