I brine chicken the day before, marinate it in a buttermilk bath, coat in seasoned flour and fry until golden brown. Perfect hot or cold.

Southern Fried Chicken recipe
Brine chicken in a gallon of water, 1 cup kosher salt (or 1/2 cup table salt) and 1/4 cup brown sugar over night. Next morning, remove chicken from brine and place in buttermilk bath for 4-6 hours. Prepare seasoned flour with 4 cups flour, 2 teaspoons of kosher salt, 1 teaspoon pepper, 1 teaspoon onion powder, 1 teaspoon garlic powder, and 1 teaspoon paprika. Dredge chicken pieces in seasoned flour; place on rack for 30 minutes before frying. Fry in 360 degree oil until golden brown and chicken floats. So good!!!!

Nashville Hot Chicken Oil
1/2 cup of oil you fried the chicken in
3 tablespoons cayenne
2 tablespoons brown sugar
1/2 teaspoon salt
1 teaspoon garlic powder
1 teaspoon paprika
Mix all ingredients in bowl; pour 1 tablespoon oil onto piece of fried chicken. It is addicting
