Ingredients:

Turkey Breast:
1 x large 6lbs turkey breast (or two smaller ones)

Turkey Rub:
4 x tablespoons of smoked paprika
3 x tablespoons of brown sugar
3 x tablespoons salt flakes
2 x tablespoons of ground black pepper
1 x tablespoon of ground cumin
1 x tablespoon of mustard powder
1 x tablespoon of garlic powder
1 x tablespoon of onion powder

Pumpkin:
1 x butternut pumpkin (squash) halved
2 tablespoons of olive oil
4 cloves of garlic (or crushed if you don’t have a food processor)
½ teaspoon of cracked pepper
2 tablespoons of unsalted butter
Salt to taste (around ¼ to ½ of a teaspoon)

Beans:
1lb x green beans
1 x tablespoon of butter (melted)
1 x tablespoon of olive oil
1 x teaspoon of crushed garlic
¼ teaspoon of cracked black pepper
½ teaspoon of salt
2 x tablespoons of hot water

Cranberry and Port Glaze:
½ cup of port
½ a cup of jellied cranberry sauce
2 fresh thyme sprigs
1 dried bay leaf
¼ teaspoon of cinnamon
¼ cup of castor sugar
1 tablespoon of balsamic vinegar
