Shakshuka

Ingredients :
– 5 Eggs
– 2 Medium Potatos (Cut small size into cubes)
– 2tbs Olive Oil ( u may use any other oil as well)
– 1 Large Size Chopped Onion
– 1sp Ginger Garlic Paste
– 1 Chopped Green Bell Papper (Cappsicum)
– 5 medium Size Chopped Tomato
– 1Tbs Tomato Paste / Tomato Puree
– 1 Tsp Red Chilli Powder
– 1.5 tsp Cumin Seeds
– 1 tsp Paprika Powder
– 1 Tbs Red Chilli Flakes
– 1 Tsp Sugar
– 2 Tsp Salt (Or as desired)
– 1 tsp black papper powder
– Fresh Coriender (For Garnish)
– 2 medium size chopped green chillies

Method :
– Put frying pan on stove , add oil and let it heat for few seconds on medium high flame
– add chopped onions into the oil and stir until onion gets transparent
– now add ginger galic paste and stir for atleast 15-20 seconds
– add chopped cappsicums (mix well and cook for atleast 2 minute)
– add tomato paste/tomato puree (mix well)
– now add cube cut potatos (mix well and cook for another 2 minutes)
– add chopped tomatos (mix and cook for 1 to 1.5minute)
– once tomato softens now add all dry spices ( red chilli powder, cumin seeds, paprika powder, red chilli flakes, sugar, salt , black papper powder and chopped green chillies )
– mix everything and cook further for 2-3 minutes
– now make space for eggs in mixture and crack eggs on it .. 4 on the sides of mixture and one in the middle ..
– sprinkle little bit of salt and little black papper powder on the top
– keep stove on minimum flame
– simmer it for 10-15minutes or untill eggs are cooked.. (if u want runny egg yolk decrease simmer time and if u want hard yolk it should be well done within 10-15minutes)
– sprinkle fresh coriender on top before serving
