8 fresh chicken thighs, bone in, including skin
2 tb. olive oil
3 fresh garlic clove
1 small onion quartered
dried whole rosemary, thyme, paprika, salt, pepper (see video for amounts)
fond / juices from pan
Cook skin side down until golden brown on med to med high heat (5 min.)
turn over cook for another 5 min.
Cover, lower heat and simmer 20 min.
