1 cup pinto beans
7 cups water
1/2 onion, cut into large chunks
1-2 garlic cloves, smashed
1 tsp chili powder
1/2 tsp smoked paprika (optional)
1 bay leaf
1 tbsp bacon fat (optional)
salt and pepper to taste
