You’ve seen the show, now give it a go. Here’s my curried snags recipe, as demo’d in the episode with my mate Joey Kellock from 1800Lasagne.

INGREDIENTS:
1 red onion
Juice of 1 lemon
Salt to taste
4 good beef sausages
1 tablespoon smoked paprika
1 tablespoon curry powder
3 stalks lemongrass
8 cloves garlic
3 cm ginger
2 cm galangal
1 cm fresh turmeric
6 shallots
6–7 dried chillis
1/2 teaspoon cumin seeds
1/2 teaspoon coriander seeds
1/2 stick cinnamon
3 star anise
3 cardamom pods
4 cloves
1/4 cup vegetable oil
1 cup chicken stock
1 tablespoon white vinegar
1/2 cup coconut milk
Puff pastry
Lime leaves
Coriander
Fish sauce (optional)

METHOD
1: Finely slice red onion, crush with lemon juice and salt and put aside.
2: Remove the sausage meat and shape into meatballs, roll in paprika and curry powder to coat.
3: Trim and chop lemongrass, peel and chop garlic, ginger, galangal, turmeric and shallots then blitz everything in a food processor with dried chillies and a pinch of salt until the paste is broken down – for a smooth paste, go longer or finish with a mortar and pestle.
4: Toast cumin and coriander seeds quickly in a hot pan then grind in a mortar to a powder, add cinnamon, star anise, cardamom and cloves and rough them up a little.
5: Heat oil in a saucepan and gently fry the ground spices a little then stir in the paste. Cook on low, stirring for 10–15 minutes. it is important to cook the rawness out of the paste.
6: Add chicken stock, vinegar and 1 cup of water to the pan and cook on high for 5 minutes. Keep stirring!
7: Add sausage balls and heat for 5 more minutes or until cooked through. Add coconut milk and heat for another minute. I like to finish with a dash of fish sauce.
8: Take the pan off the heat and let sit while you prep your cheat’s roti – cut a sheet of puff pastry into squares and fry in a non-stick pan without oil until golden.
9: Plate sausages and sauce – you can strain the sauce if you want it less chunky. Garnish with coriander, deveined and finely sliced lime leaves and the red onion from earlier. Serve with roti.
