Ingredients:

Dry spices:

1 ½ tbsp – Onion pwd
1 tsp – smoked paprika
1 ½ tsp – salt
1 tsp – black pepper pwd
½ tsp – thyme
½ tsp – rosemary
1 tsp – Oregano
½ tsp – Lemon zest
4 tbsp – Oil
3 tbsp – Lemon juice
1 tbsp – White vinegar

Greens (herbs):

1.5kg – Whole Chicken
3 tbsp – Parsley
¼ cup – Spring onion
¼ cup – Lemon grass
¼ cup – Basil leaves
8 to 10 – Garlic cloves
9 – Jalapeño

Glaze:

2 to 3 tbsp – Oil
1 tsp – Paprika pwd
¼ tsp – Oregano
¼ tsp – Dry parsley
