Can’t beat a roasted smokey chicken, this time smothered in peri peri paste, with delicious olive oil & flavourful herbs.
PERI PERI CHICKEN!!!
SERVES : 3 People
PREPARING TIME: 10 Mins
COOKING TIME : 20 Mins
MARINATION TIME : Minm 1 hour & Maximum Overnight
SPICE LEVEL: Hot
INGREDIENTS FOR PERI PERI CHICKEN
Chicken – 500 grams
Ripped red chillis – 10 Nos
Garlic Pods – 20 Nos
Bay leaf – 2
Available Herbs – 1 Tsp
(Thyme, Parsley, Oregano, Basil)
Smoked Paprika – 1 tsp
Salt – As per Taste
Juice of 1 lemon
Olive Oil – 30 to 50 Ml
Coriander Leaves – Few
Charcoal (For smoking flavour)
ALTERNATIVE METHOD
HERBS – Incase of if you don’t get the above mentioned herbs, sun dry mint leaves for 2-3 days and blend it in a mixer blend & use it.
SMOKED PAPRIKA – Slightly Smoke Red chilli powder in a medium hot flame over a tawa and use it alternatively.
ORGINAL PERI PERI CHICKEN –
Cilantro Chilli
African Devil Chilli
Fresh herbs instead of dried ones
Sea / Black salt.
