INGREDIENTS
Brava sauce
• 4 garlic cloves
• 150 ml extra virgin olive oil
• 80 g flour
• ½ l water
• 1 splash fino wine
• 1 cda. Sweet paprika
• ½ cda. Spicy paprika or chilli
• Salt
Potatoes
• 5-6 medium potatoes
• Olive oil to fry the potatoes
INSTRUCTIONS
1. Peel the potatoes cut them into small squares and deep fry them in oil over low heat at 130 º so that they can be confectioned and done well inside, about 6-7 minutes.
2. Remove from heat and put them on kitchen paper to drain the oil and set aside.
3. Continuation we are going to prepare the brava sauce.
4. Put oil in a pan and fry the peeled garlic
5. When they are golden, add the flour and stir until the flour is toast, a couple of minutes.
6. Add the sweet and spicy paprika and sauté for about a minute.
7. Add the water, wine and salt, mix everything well and move constantly until the sauce is reduced and has a fine and creamy texture.
8. Pass the sauce through the blender and crush everything well.
9. Taste and rectify if necessary with salt.
10. Heat the oil until 180 º to finish frying the potatoes.
11. Remove and drain the oil.
