Here is another rice dish that you will be going to love. We are using brown rice to make this flavourful rice and beans dish with paprika seasoning.
• 1 cup Red Onion
• 4 Cloves Garlic (minced)
• 3 cups Brown Rice (Cleaned and Rinsed)
• 1 1/2 Dry Paprika
• 1 tsp Dry Turmeric
• 1 tsp Salt
• 1 tsp Black Pepper
• 1 tsp Dry Cumin
• 1 tbsp Tex-Mex Seasoning
• 4 Cups Chicken Stock
• 2 tbsp Tomato Paste
• 1 Jalapeno Pepper (Sliced)
• 1 Cup Black Beans
• 1/2 Cup Cherry Tomatoes (sliced in half)
• 1 Lime (Juice)
INSTRUCTIONS
• Saute red onion in a large skillet over medium-high heat for 2-3 minutes
• Add garlic and stir for a minute
• Add brown rice and the dry ingredients (Salt, pepper, turmeric, paprika, cumin and Tex-Mex seasoning). Mix well for a minute.
• Add chicken stock and tomato paste
• Cook on low heat for 30-40 minutes or until the rice is done.
• Add Jalapeno pepper, and black bean and cook for another 2-3 minutes
• Add a squeeze of lime and cherry tomatoes
