Ingredients & Measurements
2 lbs Scallops
Vegetable Oil
Grits:
2 cups chicken stock
2 cups milk
1 cup grits
2 tbsp butter
1 tsp salt
1 tsp pepper
1/2 parmesan cheese
Scallops breading:
1/2 cup flour
1 tbsp smoked paprika
1 tbsp salt
1 tbsp pepper
1 cup panko
Zest 1 lemon
6 tbsp melted butter
Egg wash:
2 eggs
squeeze 1 lemon
1 tbsp olive oil
1 tbsp minced garlic
1/4 cup chicken stock
4 tbsp butter
2 tbsp squeezed orange juice or orange marmalade
