I created this filling recipe to satisfy the taste buds and nourish the body: it’s rich in Vitamin A, B-6, C, manganese and folate, and abundant in fiber and flavor. It was created with our family’s love for travel and for spices from those regions, such as Hungarian paprika. It is an homage to the savory caramelization of plants meeting the intensity of spices.

Spices add new sensory layers, like pairing accessories with a favorite outfit. The protein-rich, sprouted chickpeas burst with nuttiness in a backdrop of creamy and savory eggplant. We are tickled by sweetness and acidity from Early Girl tomatoes, surprised by the delightful caramelization of the carrots, and comforted by the familiar sweetness of roasted sweet potatoes. Our palate will travel to spice regions around the world within one bite: turmeric from Morocco, garam masala from India, and cumin from Egypt.
This heart-healthy dish is free of saturated fat and low in sodium.
