Paella is one of the best-known dishes in Spanish cuisine. The spaniards view it as Spain’s national dish. But there is not really an original paella recipe. This dish has many variants in Spain and around the world. Try our version of Paella Mixta, made with a combination of seafoods and meat. With prawns, mussels, cuttlefish, pork ribs, salchichas and chicken, every forkful is a treat that reminiscent Spanish holidays.
INGREDIENTS:
– 1/4kg cuttlefish, cleaned and sliced
– 1/4kg tiger prawns
– 3 pieces cray fish ( you can add more if you want )
– 1/2kg salchichas
– 1/4kg pork ribs, seasoned and boiled
– 1/4kg chicken wings, seasoned and boiled
– 2 large onions, finely chopped
– 3 cloves garlic, finely chopped
– 1 large red bell pepper, chopped
– 1/4kg flat beans, chopped and boiled
– 300g fried tomato sauce ( tomate frito in olive oil ), or you can also use fresh tomatoes
– 1kg round rice ( or you can use bomba rice )
– 2 packs ( 1 liter each ) fish stocks
– 1 tablespoon paella seasoning with saffron
– 1/4kg boiled mussels and clam shells
– olive oil
* I used 52cm paella pan ( paellera ), good for 8-9 persons
