One Pot Vegan Spicy Bean and Vegetable Stew

Welcome to the Welsh Vegan! Today we have a lovely vegan spicy bean and vegetable stew that meat-eaters will love too! This vegan recipe is so easy and can all be done in one pot. This vegan spicy bean and vegetable stew will warm you up even on the coldest of days!

Vegan Spicy Bean and Vegetable Stew Ingredients

1 tbsp Olive Oil
1 Large Onion
4 Cloves of Garlic
1 Large Sweet Potato
3 Carrots
1 Pepper (red or yellow)
1 Stick of Celery
1 Parsnip
400g of mixed beans
400g of chopped tomatoes
500ml of Vegetable stock
1tsp of salt
1tsp of chilli powder or flakes
1tsp of smoked paprika
1tsp of coriander
(OPTIONAL) 2tsp of cornflour and 2tsp of water

Vegan Spicy Bean and Vegetable Stew Method
1. Heat the oil on medium-high heat and add the onions and cook for 3 minutes
2. Add the garlic and cook for a further 3 minutes (remember to stir!)
3. Add the red pepper and cook for 2 minutes
4. Add the parsnip and cook for 2 minutes
5. Add the celery and cook for 2 minutes
6. Add the carrots and cook for 5 minutes
7. Add the sweet potato and stir thoroughly
8. Add the salt, chilli, paprika and coriander and stir it all through and cook for a further 3 minutes
9. Add the beans, tomatoes and vegetable stock and stir through
10. Bring to the boil then simmer for 30 minutes ( remember to keep stirring occasionally!)
11. (OPTIONAL Mix 2 tsp of cornflour and 2tsp of water together then add to the stew)
12. Cook for 5 more minutes then enjoy 🙂
