One-Pot Chicken Drumsticks with Carrots and Coconut Milk

Looking for a quick and easy dinner under an hour? Try this one-pot chicken drumsticks recipe! Juicy chicken paired with tender carrots and creamy coconut milk, it’s a deliciously wholesome meal the whole family will love.

Ingredients

For Seasoning the Chicken:
• 1 kg chicken drumsticks
• ½ teaspoon salt
• ½ teaspoon black pepper

For the Main Dish:
• 1 teaspoon olive oil
• 1 garlic clove, chopped
• 1 onion, chopped
• 1 apple, chopped
• 200 g carrots, sliced
• 100 ml coconut milk
• 100 ml water
• Fresh thyme sprigs
• A pinch of salt
• A pinch of black pepper
1 teaspoon paprika

For Frying the Chicken:
• 2 tablespoons olive oil
• 1 tablespoon unsalted butter

Instructions

Step 1: Prepare the Chicken
1. Season the chicken drumsticks with salt and black pepper. Make shallow cuts in the meat to help the flavours penetrate and cook evenly.

Step 2: Fry the Chicken
1. Heat 2 tablespoons of olive oil and 1 tablespoon of unsalted butter in a large pan over medium heat.
2. Fry the chicken drumsticks for 5 minutes on each side until golden brown. Remove the chicken from the pan and set aside.

Step 3: Sauté the Vegetables
1. In the same pan, add 1 teaspoon of olive oil. Sauté the chopped onion until soft and translucent.
2. Add the chopped garlic and cook for 1 minute until fragrant.
3. Stir in the chopped apple and cook for another minute.
4. Add the sliced carrots, season with a pinch of salt and pepper, and mix well and paprika.

Step 4: Combine and Cook
1. Return the chicken drumsticks to the pan, arranging them over the vegetables.
2. Pour in 100 ml of coconut milk and 100 ml of water. Mix well to combine.
3. Cover the pan and simmer over medium heat for 10 minutes.

Step 5: Add Fresh Thyme
1. After 10 minutes, add fresh thyme sprigs to the pan.
2. Continue cooking for another 20 minutes on low to medium heat, allowing the flavour to meld together and the chicken to become tender.

Serving Suggestions

Serve this one-pot dish over steamed rice, mashed potatoes, potatoes chips or crusty bread to soak up the creamy coconut milk sauce or on its own.

• For extra flavor, marinate the chicken in salt and pepper for 30 minutes before cooking.
• Use a sweet variety of apple like Fuji or Gala for a hint of natural sweetness.
