These are some of my favorite meals. No need for fancy kitchen tools, easy, and efficient. I used the same pots and tools and would wash in between. Took me 2 hours to prep, cook, and store.
Meal Prep ingredients for 3-4 days:
Serves 2.
Budha Bowl:
1/2 Cauliflower
1/2 red onion
1/2 squash
2 cans of chick peas.
1 cup of quinoa.
1/2 for serving.
Favorite sauce to drizzle.
Latin Bowl:
2 cans of Jack fruit
2 cans of black beans
4 bay leaves
2 cloves of garlic
1 1/2 cup of rice
4 ripe plantains
1/2 cabbage for serving.
Seasonings used in both recipes:
Paprika
Cumin
Garlic (powder or fresh)
Salt
Pepper
Avocado Oil
