So the kids are back in school!!! But thanks to Covid, for many of them that means the dining room or kitchen has become the classroom. That got me thinking about fun ways kids can eat lunch at home. I immediately remembered this great comfort food dish my mom made for us growing up. Stuffed hot dogs with mashed potatoes or as my son Larry likes to call them… MASH DOGS!
It uses left-over (or store-bought) mashed potatoes, mustard and onions. Feel free to add the toppings you like best. Its not just great for the kids at lunch.. everyone will love them as a quick and easy dinner too! Warning: I don’t make homemade mashed potatoes in the video – so see below for an easy recipe!

Ingredients
2 cups leftover or store-bought mashed potatoes (recipe for homemade below)
8 jumbo all-beef hotdogs (Eisenberg’s, Hebrew National or Nathan’s are my favs)
1 small sweet onion, chopped
mustard of choice (I prefer spicy brown mustard)
sweet paprika
Optional toppings
Cheese
Step 1
Preheat Broiler. Slice hotdogs lengthwise being careful not to cut all the way through.
Spread mustard on each halves of the hotdogs, then spoon over the diced onion.
Step 2
Take warm or room-temperature mashed potatoes and generously spoon overtop the hot dog halves. Sprinkle with paprika to give the hotdogs a nice color.
Step 3
Place under broiler for about 8-9 minutes, checking occassionaly to make sure the tops don’t burn
Step 4
Plate alongside your favorite vegetable. Enjoy

For Homemade Mashed Potatoes
6-7 Yukon Gold potatoes, peeled & quartered
a few Tbs Milk or heavy cream
4-8 tbs salted butter
salt & pepper to taste
Step 1
Cover peeled, cut potatoes with cold, salted water. Bring to a boil, then reduce the heat to low to maintain a simmer, and cover. Cook for 15 to 20 minutes, or until you can easily poke through the potatoes with a fork.
Step 2
While the potatoes are cooking, melt the butter and warm the milk. You can heat them together in the stove or microwave.
Step 3
When the potatoes are done, drain the water and place potatoes into a large bowl. Pour the heated cream and melted butter overtop.
Step 4
Mash the potatoes with a potato masher. Slowly add the milk/butter mixture. You can use a hand mixer to beat them until smooth but be very careful not to over beat or the potatoes will end up gluey.
Step 5
Add salt and pepper to taste… or more butter… No judging here! Enjoy
