Enjoy a raw vegan Marinated Mushroom Marinara with chef Lissa from Raw Food Romance! Lissa has been enjoying a raw food lifestyle for over 7 years and is excited to share her creation with you today!

Recipe:

Cucumbers for the cucumber noodles (or noodles of your choice if not raw)

For the mushrooms:

6 brown cremini mushrooms
1/4 cup chopped broccoli
1/4 cup chopped sweet onion
1 tbsp coconut aminos
2 garlic cloves, grated
Marinate in the dehydrator at 115F for 1 hour

For the sauce:
5 pitted medjool dates
1/2 cup sundried tomatoes
1 small fresh tomato
1/2 red bell pepper
1 tsp apple cider vinegar
2 cloves of garlic
Water
Blend on high until slightly warm
Once blended, add a handful of fresh basil and a tbsp of dried oregano. Pulse into the sauce for a few seconds.

Mix sauce with the marinated mushrooms and scoop atop the noodles!
