Ingredients:

1 Small Zucchini
1/2 Medium Onion
1 Roma Tomato
Salt of your Choice
Pepper
NM chili powder or Paprika
1/2 Cup Chopped Queso Panela

1/2 Cup Spinach
1 Serrano Pepper (Optional)
1 Small Garlic
2 Large Eggs

Topping Suggestions
Avocado, Cilantro. Queso Cotija, Mexican Sour Cream
