Keto Faux-Tato Salad

7 c. Boiled or Steamed Cauliflower (Not too firm or too soft or you’ll lose the “Potato” texture)
6 Hard boiled eggs, chopped
½ c. Mayonnaise
¼ c. Dill Relish
¼ c. Diced Onions
3 Tbsp. Yellow Mustard
1 ½ tsp. Onion Powder
1 ½ tsp. Garlic Powder
1 tsp. Sea Salt
1 ½ tsp. Ground Black Pepper
Smoked Paprika

1. Boil cauliflower in pot of water for approximately 5 minutes or until desired texture. Or steam cauliflower in a microwave safe dish. Pierce cauliflower with a fork to determine the desired texture.
2. Add seasoning to cauliflower and mix well.
3. Next, add the onions to the salad and well.
4. Mix in the Dill Relish.
5. Now add the mayo, remember to mix after adding each ingredient.
6. Add the mustard and incorporate until mixed well.
7. Lastly, add the chopped eggs and give the salad a good mix.
8. Give it a taste to see if you’d like to add any additional seasonings to taste.
9. Top with a sprinkle of Smoked Paprika.
