It’s creamy, crunchy, savory, spicy and rich in protein and good plant based fat. The combination of avocado, olive oil and mayo make this Keto Low Carb Gluten free salad exceptional. Ingredients:
1 large head cauliflower
1/2 cup avocado mayonnaise
6 hard boiled eggs, peeled and roughly diced.
1 1/2 cups chopped parsley
3 tbsp spring, minced onions
2 tbsp fresh mint leaves, minced (about 6 sprigs)
Curry Lemon Dressing:
1 large clove garlic
3 lemons, juiced
1 cup olive oil
1 tbsp curry powder
1 tbsp Hungarian paprika
Sea salt and pepper
