HOW TO MAKE THE TASTIEST HAITIAN EPIS

Epis is a Flavor based used in nearly every Haitian dish, it is of the healthiest flavor base use in our cuisine, EPIS is typically used to make rice and bean, stews, and soups. It is also used to marinate various meats, poultry and fish. In Haiti the Traditional epis is made with a wooden Mortar and pestle. But nowadays you can use different tools such as Blender or food processor.

Here’s the recipe on how i make my tasty epis

EPIS RECIPE

3 sprigs of parsley

1 teaspoon of thyme leaves

1 teaspoon of dry thyme

1 cup of mix Green, yellow, red bell Peppers

4 scallion stalks

2 chicken bouillon cubes ( optional)

1 cup of peeled garlic

1 teaspoon of tumeric

1 tbsp of fresh ginger

1/2 tsp of cayenne

1/2 tsp of paprika

1 pinch of back pepper

Salt to taste ( preferably Himalayan pink salt)

2 tbs of Lime juice or 1 lime ( added when I’m cooking meat)

1/4 cup of Avocado oil or any oil that you like

Add all the ingredients into a blender or food processor, blend till you get a pesto consistency, add oil gradually, store in a air tight container in the fridge, use it for your meat, poultry or fish.
