FOR HUMMUS
INGREDIENTS –

Cooked chickpeas 1 cup
White sesame seeds or thahini 1/2 cup
Garlic pods 4 nos
Lime juice 2 tbsp
Extra-virgin olive oil 1 cup
Paprika powder for garnish
Salt

FOR MAKING
HUMMUS –

– Drain the cooked chickpeas and transfer them to a grinder jar or food processor.
– Add sesame seeds, garlic pods, olive oil, lemon juice and salt.
– Blend them for about 5 minutes until smooth paste. Taste and adjust as needed by adding more lemon juice or salt.
– Spoon the hummus onto a plate and spread the hummus with the back of a spoon to create swirls.
– Drizzle with olive oil, cooked chickpeas and paprika.

SERVE COLD OR ROOM TEMPERATURE.

FOR FALAFEL
INGREDIENTS –

Soaked chickpeas(overnight) 1 cup
Small onion 1
Garlic 4 nos
Gram flour/ besan 2 tbsp
Coriander leaves
Parsley leaves
Cumin seeds 1 tsp
Baking soda 1/4 tsp
Salt to taste
Oil for deep frying

FOR MAKING
FALAFEL –

– Rinse 1 cup chickpeas for a couple of times in water. Then soak the chickpeas in enough water overnight or for 8-9 hours. Drain them well.
– Then add them in a grinder jar or food processor.
– Add sliced onion, coriander leaves, parsley leaves, garlic, cumin seeds, baking soda and salt.
– Grind the mixture in small intervals of time. you should get a semi coarse mixture. Do not make it too pasty and smooth, avoid adding water while grinding.
– Take the mixture in a bowl, add gram flour, with a spoon or your hands mix everything well.
– The consistency should be semi coarse, so that you are able to shape them in balls or patties.
– Heat oil for deep frying in a pan. Roll a small ball or patty from the mixture and place it in the oil.
– The oil temperature is also crucial, as if the oil is not hot enough, the falafel can break.
– When the bases get light golden, gently turn over and fry the other side.
– Fry till they become crisp and are golden.
– Drain them on kitchen towels to remove excess oil.

SERVE CRISPY FALAFEL AS A SIDE SNAKE WITH A HUMMUS. YOU CAN ALSO STUFF THEM IN PITTA BREADS.
