We had these white bean falafels with a nice salad & some vegan yogurt sauce and it was such a delight. It was one of the last warm days in Paris so trust me, I was happy to eat this! (even though usually me & salads are not a good combo).

*Quick recipe*
INGREDIENTS FOR THE FALAFELS
– White Beans
– Carrots
– Shallots
– Garlic
– Curcuma, paprika & shawarma spices
– Breadcrumbs
– Some flour or cornstarch
– Some olive oil, & some water

HOW TO (with a food processor)
– Grate the carrots with the food processor, then set aside.
– Mix the white beans, shallots, garlic, spices in the food processor. When it gets a bit thick, add some water. Then add the breadcrumbs.
– Shape the falafel as you want.
– Coat with some flour & reshape a bit.
– Cook 6-7 minutes with some olive oil in a pan (each side).
– Ready to be eaten !

SALAD :
– Greens
– White asparagus
– Beetroots
– Carrots
– Yogurt sauce (soy yogurt with some olive oil, garlic powder, black pepper, parsley, chives).
