Beef and Pumpkin Chili Recipe, Meal Culture & Philosophy, History

This Healthy Beef and Pumpkin Chili is a hearty, flavorful dish perfect for autumn. It combines ground beef, pumpkin, and spices for a comforting meal that warms you from the inside out.

Servings: 6 (about 1 1/2 cups per serving)
4-quart pot or Dutch oven

Ingredients:
1 lb ground beef (or substitute with ground turkey)
1 medium onion, chopped
2 cloves garlic, minced
1 can (15 oz) pumpkin puree (or 2 cups fresh pumpkin, peeled and cubed)
1 can (15 oz) diced tomatoes (or 2 medium fresh tomatoes, diced)
1 can (15 oz) kidney beans, drained and rinsed (or 1 1/2 cups cooked kidney beans)
2 cups beef broth (or vegetable broth for a lighter option)
2 tbsp chili powder
1 tsp cumin
1/2 tsp smoked paprika (optional, for extra depth)
Salt and pepper to taste
Optional toppings: shredded cheese, sour cream, chopped cilantro
Suggested sides: crusty bread or cornbread

Instructions:
Sauté the Beef: In a 4-quart pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.
Cook the Aromatics: Add the chopped onion and minced garlic to the pot. Sauté for 3-4 minutes, or until the onion becomes translucent and the garlic is fragrant.
Add the Pumpkin and Tomatoes: Stir in the pumpkin puree (or fresh pumpkin) and diced tomatoes.
Incorporate the Beans and Spices: Add the kidney beans, beef broth, chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine.
Simmer: Bring the mixture to a gentle simmer and cook for about 30 minutes, stirring occasionally.
Serve: Ladle the chili into bowls (approximately 1 1/2 cups per serving) and top with your choice of shredded cheese, sour cream, and chopped cilantro. Serve with crusty bread or cornbread on the side.

Complimentary Foods and Beverages:
Side Dishes:
Crusty Bread: Ideal for dipping and soaking up the chili’s rich flavors.
Cornbread: Adds a touch of sweetness that pairs well with the savory chili.
Simple Green Salad: Light and refreshing, balances the heartiness of the chili. A lemon vinaigrette dressing can brighten up the meal.
Roasted Vegetables: Options like roasted Brussels sprouts, carrots, or sweet potatoes can complement the earthy flavors of the pumpkin.
Baked Potatoes: Serve as a side or even use the chili as a topping for baked potatoes.
Beverages:
Iced Tea: A classic, lightly sweetened iced tea can refresh the palate.
Sparkling Water with Lemon or Lime: Adds a bit of zest to cleanse the palate between bites.
Hot Apple Cider: Complements the autumnal elements of the chili, adding warmth and seasonal flavor.
Fruit Smoothie: For a nutritious option, a berry or banana smoothie can add a touch of natural sweetness to the meal.

Table Service:
Serve: Present the chili in warm bowls to retain heat. Place toppings like cheese, sour cream, and chopped cilantro in small bowls for individual customization.
Accompaniments: Set out bread baskets with sliced crusty bread or cornbread. For added flair, include butter or honey butter.
Utensils: Provide spoons for the chili and small knives if buttering bread.
