Cottage Pie Filling (serves 6):
500g minced meat of your choice (I use beef or turkey)
1 large onion
2 celery sticks
2 medium carrots
400g can of chopped tomatoes
2tbsp tomato puree
500ml beef stock
1tbsp Worcestershire sauce
1tsp dried mixed herbs
4tsp cornflour
salt and pepper to taste

Shakshuka (serves 4), we have it with some rye bread or potato waffles:
1 red onion
1 red pepper (yellow, orange)
1 clove minced garlic
2 cans of chopped tomatoes
2tbsp tomato pure
1tsp mild chilli powder
1tsp ground cumin
1tsp paprika
pinch of sugar
salt & pepper to taste
chopped parsley
100g feta (or goats cheese)

Sweet and Sour Chicken (serves 4):
2 chicken breasts
2tsp coconut oil (or whatever you use)
1 medium onion, cut into 12 wedges
2 peppers (I use any but green ones)
2 garlic cloves, minced
25g chunk of fresh ginger, grated
pepper and salt to taste
Sauce:
425g can of pineapple chunks in natural juice (keep all the juice)
2tbsp cornflour
150ml water
2tbsp dark soy sauce
2tbsp white wine vinegar
2tbsp soft light brown sugar
2tbsp tomato ketchup
1/2tsp chilli flakes

Poulet au Vinaigre (serves 4), we have it with some veg. Mash potato will be amazing with it:
6 chicken thighs (it’s 8 in the original recipe, but I often put 6)
1/2 onion
2 garlic cloves, minced
3 tomatoes
1tbsp tomato puree
1/2tsp mustard powder
300ml chicken stock
4tbsp white wine
3tbsp white wine vinegar
80g low-fat cream cheese
salt &pepper to taste

Pea and Feta Omlette:
30g frozen peas
30g feta cheese
1/2tsp dried mint
2 large eggs (I use 3 for Matt)
Salt and Pepper to taste

Cottage Cheese Wrap:
2 wraps (whichever you prefer, I had seeded ones)
250g cottage cheese (I use half fat)
100g plain yogurt (will work without it)
3-4 small tomatoes
Sweet chilli sauce to taste
dill and parsley to taste
