It’s so hard to find mayonnaise that doesn’t have things like corn, soy, and sugar. This keto mayonnaise recipe is really simple and easy to make with just a few ingredients. It’s fresh, it’s keto-friendly, and it’s really delicious.

You can also get creative with this mayonnaise recipe and customize it to make it how you like it.

This low carb mayo is made with extra virgin olive oil and coconut oil, an omega 3 fatty acid which has many powerful health benefits for your body and brain.

Ingredients

¾ cup olive oil
½ cup coconut oil, melted but not hot
1 large egg, room temp
2 large egg yolks, room temp
1 tablespoon Dijon mustard
Pinch of salt
Pinch of smoked paprika
Optional: 1 tablespoon whey/ Stevia or Monkfruit drops

Procedure
Add egg, mustard, ACV, salt and paprika into food processor and blend for 20 seconds. Scrape sides. Turn on processor and very slowly, add a few drops of oil until you see it begin to thicken.
Then continue adding the oil in a thin slow stream. After all the oil has been added, add lemon and pea or whey protein powder and blend for additional 10 seconds. Taste and add extra salt, lemon, or vinegar, depending on your liking!
Store in an airtight container or jar. This should last you for weeks!
