Salaam,
Having family over for Canadian thanksgiving we decided to have a little fun. Not being huge fans of Turkey, we decided to cook two kinds of chicken for a little competition. While things were competitive, we supported and guided each other throughout which I guess brings out the Canadian in us 😉

Ingredients
Smoked Chicken
Brine
– Ginger beer – 1 bottle
– Vinegar – 1 cup
– Salt – 1 Tablespoon
Marinade / Rub
– Paprika – 1 TBSP
– Kosher Salt – 1 TBSP
– Garlic (Granulated/Powder) – 1 TBSP
– Brown Sugar – 1/2 TBSP
– Onion Powder – 1/2 TBSP
– Chilli Flakes – 1/2 TBSP
– Cumin – 1/2 TBSP
– Black Pepper – 1tsp
– Cayenne Pepper – 1 tsp
– Crushed Mustard – 1/2 TBSP

Baked Chicken
Rub
– Kosher Salt – 1 TBSP
– Fennel powder – 1 tsp
– Coriander – 1 TBSP
– Black Pepper – 1 TBSP
– Garlic – 1 TBSP
– Paprika – 1 TBSP
Drizzle
– Crushed Mustard – 1 TBSP
– Butter 2 TBSP
Sauce
– Butter – 2 TBSP
– Garlic – 4 cloves
– Onion – 1x small
– All purpose flour – 3 TBSP
– Pear Juice – 3 TBSP
– Dijon Mustard – 2 tsp
– Broth – 4 cup
