Dear viewers,

We have visited Rethymno in Crete and I fell in love with the tranquility of the place, especially old town. Now we are really starting to mix the three aspects what this channel is all about: Finance, cooking and culture.

In Greece the food is absolutely wonderful. There is top quality olive oil that you cannot buy easily in the north of Europe and really tasty vegetables. We rented an Air BnB with a small garden and the best of it all was that we had our own fresh lemons from the tree.

The list of ingredients is:

– Zucchini
– Aubergine
– Paprika
– Champignons
– Onion
– Feta Cheese
– Lemon
– Olive Oil
– Herbs
– Salt
– Crema de Balsamico

You need to pre heat the oven at about 200 degrees celcius and leave everything in there to caramelize nicely for about 45 minutes. Please keep a close look that nothing burns and turn everything over if your baking plate is too full to make sure that all the veggies get well done.

As a final toppings you add the feta cheese and put the herbs on top, you round it off with fresh lemon juice and some extra olive oil to make it healthy and shiny.
