500g Jersey Royals, or other new potatoes
1 knob butter
1 small bunch fresh mint

4-6 large slices of stale bread made into crumbs
150g grated Parmesan
1 medium bunch parsley
For The Green Beans:
200g green beans, topped
2 shallots
