Ingredients:
* 1 tablespoon olive oil
* 1 medium yellow onion, diced
* 1 red bell pepper, diced

* 1 teaspoon ground cumin
* 1 teaspoon smoked paprika
* ½ teaspoon dried oregano
* ½ teaspoon sea salt (adjust to taste)
* ¼ teaspoon black pepper
* 1 (15-ounce) can diced tomatoes
* 1 (15-ounce) can black beans, drained and rinsed
* 1 (15-ounce) can kidney beans, drained and rinsed
* 1 cup low-sodium chicken broth
* 1 cup chopped zucchini (optional, for added fiber)
* Juice of ½ lime (optional, for brightness)
* Fresh cilantro, chopped (for garnish)
* Sliced avocado or Greek yogurt (optional toppings)

Preparation:
Heat the olive oil in a large pot over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes until softened. Stir in the garlic and cook for another minute until fragrant. Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks. Stir in the tomato paste, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Cook for 2 to 3 minutes to allow the spices to bloom. Add the diced tomatoes, black beans, kidney beans, chicken broth, and zucchini if using. Bring the chili to a simmer, then reduce the heat to low. Cover and let it simmer for 25 to 30 minutes, stirring occasionally. If the chili gets too thick, add a splash of broth or water to reach your desired consistency. Stir in lime juice if using. Taste and adjust seasonings as needed. Serve hot, topped with fresh cilantro, avocado slices, or a dollop of Greek yogurt if desired.
