Family Favorite Vegan Spaghetti Bolognese Recipe

INGREDIENTS
– 5 servings
2 sprigs of fresh rosemary
1 red onion
3 cloves of garlic
Olive oil
180g vegan sausages
200g plant mince
200ml vegan red wine
2 x 400g tins of plum tomatoes
1 x 140g tin of tomato puree
1 cup water
1/3 cup sun-dried tomatoes
1 teaspoon smoked paprika
1 teaspoon black pepper
500g spaghetti
1 teaspoon salt
Vegan Parmesan cheese
Extra virgin olive oil
DIRECTIONS
1. Pick and finely chop the rosemary. Chop the onion, garlic and vegan sausages.
2. Heat a pan with sufficient olive oil. Add vegan sausages, rosemary, garlic and onion and cook for 5 minutes.
3. Add plant mince, stir well for 2 minutes.
4. Add the wine and leave to boil, then add chopped sun-dried tomatoes, plum tomatoes, tomato puree, water, smoked paprika and pepper. Stir well, break the plum tomatoes and vegan sausages apart.
5. Cover with a lid, simmer for an hour. Remove the lid and stir another 30 minutes.
7. Cook the spaghetti in boiling salted water according to the packet instructions.
8. Return to the pan with a few spoons of Bolognese, cooked spaghetti and grated vegan Parmesan, mix well.
(Add a splash of spaghetti cooking water, if needed)
9. Place the spaghetti on a plate, add grated vegan Parmesan and a drizzle of extra virgin olive oil.
10. Enjoy.
