FALAFEL

INGREDIENTS
1 cup of chickpeas soaked overnight/ 1 can of chickpeas
2 cloves of Garlic
½ Onion sliced
3 to 4 Chillies
2 to 3 tablespoons of coriander leaves chopped (can increase the quantity if u need more green colour falafel
2 to 3 tablespoons of parsley leaves chopped
2 tbsps of flour
½ tsp of baking soda
Required salt
½ tsp of cumin powder
1 to tsp of paprika powder
Oil 3 to 4 tbsps
METHOD
• Soak the chickpeas overnight if the ready can is not used.
• Grind the chickpeas along with garlic, chillies, corainader leaves, parsley, cumin powder , onion and paprika powder.
• See to it that the paste is nice and moist.
• If you feel the paste is dry then some water can be added.
• The falafels can be made right away , but I prefer keeping the mix in the fridge for 2 hours.
• After couple of hours take the falafel mix out of fridge and add a pinch of soda to it.
• If you have falafel maker its more easy to make the patty else you can make balls or flat shapes.
• If baking it depends on the temperature of your oven. I kept for 20 minutes and flipped both the sides
• Now you can start the baking and frying simultaneously. I have shown both the methods .
• For frying take a non stick pan add olive oil and shallow fry the falafels.
• Serve the falafels hot with Hummus.

HUMMUS

INGREDIENTS

1 cup of chickpeas either soaked overnight or a can of chickpeas
Required water for grinding.
5 tbsp of tahini
5 tbsp of Lemon juice ( 1 and ½ lemon)
2 to 3 tbsp of Olive Oil
Salt as required
Parsley leaves fir garnishing
2 cloves of garlic
½ tsp of cumin powder
½ tsp of paprika
METHOD
•Keep a tbsp of chickpeas for garnishing and grind rest of chickpeas with tahini, lemon and garlic. After that add olive oil and grind once again.Pour the mixture into the bowl and turn the hummus with the spoon to have a space in between to garnish with the tsp of chickpeas,
•Last step is to sprinkle some cumin powder and paprika. Garnish parsley and add olive oil also if needed.
•Hummus is ready to serve.

I make a wrap whenever I plan to make hummus and falafel together. I have used Arabic bread for the wrap and inside it I have added cucumber and tomato. You can add any veggies of your choice. To make it completely vegan u can skip the mayo that I drizzled.
